slow down day

i’m trying to remember what i did today and i can’t remember.  i didn’t have to go to work and the roads were yucky enough that i didn’t want to leave the house, so i stayed home and got caught up on some of the little things that i normally let slide for way too long.  lots of laundry.  made
irish oatmeal with apricots, dried cherries and sliced banana on top for breakfast.  crock-potted an enormous batch of black beans.  finished the rest of my homework that was due today.  started on another quilt.

i did enjoy walking outside this morning and hearing the “clack, clack” of the icy tree branches knocking together in the wind.  sort of like a giant, bamboo windchime as big as my whole neighborhood.

there is something quite relaxing about not being able to run errands and just staying home.  crafting with the supplies i have on hand.  creating meals with the food already in my pantry, fridge and freezer.  what’s your favorite “staple” meal?  the meal you can (almost) always cook on a moment’s notice because it only has ingredients that you pretty much always have on hand?
