unexpected freebies

IMGP3388remember that post i wrote about diy larabars with some original recipes for that style of snack bar?  if you actually read through the comments, you might have seen a response from the larabar people themselves, asking if i’d like to receive a special gift in recognition of my post.  (a friend of mine asked if their “special gift” was going to be a lawsuit, but i didn’t think that was their style so i went ahead and sent in my contact info.)  a few days later, i received not only free larabars (nine!) in a fabric drawstring bag, but also this fantastic, etsy-made apron (fully lined!  check out that ruffle!)!  do they know their target audience, or what?

i googled around and found that a handful of other bloggers had also received similar gift packs for posting larabar recipes (although i think mine were the only original recipes, the others were all copying actual larabar flavors) but i just wanted to give a shout-out to the social media promotional manager (or whatever your title is) at larabar and say that you. really. get. it.  instead of getting defensive about me using your name without your permission (which you totally could have) you send me a thank you gift which, in turn, i am impressed enough to blog about which, in turn, makes you look good.  strong work.  although, i’m sure that’s not news to you.  this is actually the second time i’ve gotten free bars from you (the first was after this ancient, long-ago post) so you’ve been on the right track for ages.  just like your yummy bars.  thank you for not being evil.

let’s start with some organization!

so, as you may remember, i invested in make-up last year.  problem was, our bathroom has no drawers, so i was a bit stumped as to where to store all this make-up.  plus, when i’m not wearing my glasses, digging around in a glass jar to find the right brush was irritating.  so i created this:

IMGP2504each of the brushes and make-up containers have a magnet hot-glued to them and i’ve lined them up in the order in which they’re used!

IMGP2505i also love that when i occasionally get around to washing the brushes, they dry perfectly on the magnet rack (i.e. sideways, not with the brush-ends up getting rusty or brush-ends down getting mushed out of shape).

IMGP3355i may regret this, but here goes:  i am going to attempt to post something to this blog 28 times in the month of february.  (like that loophole?  how it wasn’t specifically once-a-day just in case i slip up?  yeah, i might still not make it.  we’ll see.)

why?  1) february is the shortest month, so it’ll be the easiest, right?

2) i feel like a i have a lot of blog posts written in my head that need to get out so i have room for other thoughts.  sort of a spring cleaning for my brain.  and camera memory cards.

3)  i want to take more pictures and blogging a lot is always good incentive.

so tell me–what type of happy stuff posts are your favorites?  which ones make you smile when you see a new one in your blogroll?  food?  style?  movies of my kid?  crafty stuff?  tutorials? giveaways?  book/app/music/restaurant reviews?  i’m not making any promises to deliver the top vote getter, but compliments may influence my decision if i’m waffling about which of two directions to take for a post topic.

by the way, that picture above has nothing to do with this post, and was actually snapped by my dear mr. happy stuff in our backyard and it cracks us up.  that ornament is not ours, but i hope that squirrel had a really nicely decorated tree this christmas.

handmade christmas

IMGP3157this year’s giving list was straight from pinterest.  before they came up with the good idea of “secret boards.”  my apologies to any family members following my pins.  perhaps next year i’ll just send the link out to everyone and tell them to “like” the ones they…. like.  anyway, here’s a re-cap of some of the things i made and gave this year:

1.  wild olive’s peanut butter & jelly game (i made 3 of these and added my own original packaging idea that incorporates a “snappy” closure and some design inspiration from zaaberry):

IMGP3171IMGP31933.  delia’s i spy photo books (i made about 8 of these.  some with photo prompts and others with text prompts for the nephews who are old enough to read.  these are so much fun to make and can easily be built on in future years.  plus, they’re fairly inexpensive.)IMGP3188IMGP31894.  hand-knit cowls.  i got on a thick-yarn/fat-needles knitting kick and whipped up 5 different cowls and got pictures of… one of them.  most of them were a simple seed-stitch pattern, one was a rib knit and the other was the honey cowl.  i really should have taken pictures.  in this photo, the cowl is doubled up.

IMGP32445.  Costumes!  I sewed these construction vests (and found hats after halloween), plus I also sewed up some pirate vests to go with the pirate hats, and i sewed some chef hats.  the older cousins had requested “knight” costumes.  amazingly, i found 2 knight helmets in shops and i made 2 felt “tunics” that they can easily pull over their heads for dress-up.  sorry, no photos.IMGP30306. Probably my favorite handmade kid gift this year was the fort kits.  i made three of them (and have supplies to make a fourth for the happy little dude) and screen printed the label onto a pillowcase that then became the carrying bag for the whole kit.  you can see the contents in the picture below.  the smaller drawstring bag is what everything (except the sheets) got put into.  All three were immediately used as soon as they were opened (and explained).  The clip-on lights were quite popular.  i used the suggestion in the comments to sew channels in the corners and middles of each side of the sheet, then kids can just run their rope or bungee cord through the channel.  brilliant!

diy “larabars”: mango + raspberry, orange + cinnamon (and other yummy stuff)

happy new year!  as a little gift to you, dear readers, i’ve created two original recipes similar to my beloved larabars.  Here’s a quick tutorial for the “mango melba” flavor pictured above.  The process is basically the same for both bars, so I’ll include two recipes at the end.

IMGP3259ingredients:  whole raw almonds, dried mango, freeze-dried raspberries, medjool dates, vanilla (not pictured)

IMGP32641.  Chop the almonds in the food processor.  You can make them a bit finer than what I’ve got pictured above, but don’t let them turn to almond butter.  Remember–they’ll break down a bit more in the next steps.

IMGP32672.  add dried mango and raspberries and process until they’re fairly small pieces (shown above before processing!).  if your dried mango is extra dessicated like mine, you might try soaking it in some hot water for about 5 minutes before adding it to the food processor.

IMGP32693.  remove seeds from the dates if necessary (they come out surprisingly easy for such a sticky fruit!) and add the dates and the vanilla to the food processor.  Pulse until the mixture is fairly fine.
this is the trickiest part of the process because you’ll need to find a good balance between the wet and dry ingredients.  the dried mango you’re using might be drier or more moist that what i had, so you may need to adjust quantities.  if it’s too dry (flies around the inside of the bowl, not really getting more chopped and definitely not sticking together), add a date or two (or even just a tiny bit of water).  if it’s too wet (sticks to the top of the food processor and you keep having to scrape it back down the blades), add more almonds.  what you’re looking for is a mixture that will easily hold together if you squish some between your fingers, but that isn’t so sticky that it makes your hands messy to touch it.

4.  line a 9×9 baking pan with plastic wrap, leaving big “wings” hanging over the sides.  dump your mixture into the pan and press it flat, using the “wings” to press it down.  when it’s about 1/2″ thick (or when you’ve got it squished all the way to the edges), cover it with the plastic wrap and put it in the refrigerator for a few hours to firm up.

IMGP3290when i opened my first batch after refrigerating, i realized that it was waaaaay too crumbly (and chunky!).  one of the great things about this recipe is that you can just dump it back into the food processor and try again!  so i did.  and i added more stuff and i tinkered and i didn’t take more pictures, but at one point, i opened the food processor after running it for a reaaaaaaaallllllly long time and discovered a smooth pink ball of food (likely a bit too overprocessed) but luckily, that was only about half of my batch and when i mixed the two together, i got this:

anyway…  once you’ve got the bars a consistency that you like and once they’re chilled….

IMGP33055.  cut them into bars (whatever size you find convenient).  see that tiny strip at the top?  we’ll do something special with that in a minute.

IMGP33126.  wrap your bars in waxed paper, seal with tape (use washi tape if you’re feeling fancy!) and if you’re giving them as a gift, add a wrapper (free downloads at the bottom of this post).  they’ll keep in fridge or at room temperature for quite awhile, but mine usually get eaten pretty quickly.  they’re great for lunchboxes, backpacks, diaper bags or to keep a few in your car (especially now when it’s cold.  maybe not in the dead of summer.).

now, back to that tiny strip of leftovers.  chop it into 1″ lengths and roll into balls.

IMGP3325these would make great party snacks!  to make them a little extra festive (but still “clean”!) roll them in raw cacao powder (i mixed mine with a little bit of powdered vanilla bean too).

IMGP3336so yummy!  ok, here are the recipes:

mango melba

1 c. almonds (raw, unsalted)
4 oz. dried mango slices (no sugar or other additives, if possible)
3/4 c. freeze dried raspberries
6-7 oz. dates (about 12-15)
1/4 t. vanilla

Line a 9×9 pan with plastic wrap, with enough hanging over the sides that you’ll be able to fold the edges in and cover the whole pan.  whir the almonds in a food processor until they are in small bits (not almond butter!).  Add the mango, raspberries, dates and vanilla and whir until the bits are small enough that if you pinch them, they stick together.  Dump the mixture into the 9×9 pan and (using those side flaps of plastic wrap) pack it firmly down.  Refrigerate for at least a few hours, then cut into bars and wrap with waxed paper and washi tape.

warm orange

1 c. almonds
zest of two clementines
juice of two clementines
1/8 t. ground cloves (or more, to taste)
1/8 t. cinnamon (or more, to taste)
12-15 dates
4 t. hibiscus syrup (optional, see directions below)

Hibiscus Syrup
1 c. water
1 c. Hibiscus flowers (also known as Jamaica, I found mine in the Mexican bulk foods section for cheap, might also be found near tea supplies?)

boil gently until it’s reduced by about 75%

the instructions to make the bars are pretty much the same as for the mango melba bars.

clean, round 3

here we go again.  after the gluttony of the holidays (hello, christmas day cheese-stravaganza with cookie buffet!) my body is begging for a week or two of clean food.  i’m looking forward to trying some new recipes (pulled chicken, quinoa tortillas, & lighter sesame chicken (with some alterations) to name a few).  mr. happy stuff isn’t really interested in going through this whole-heartedly again (he’ll eat my lunch-meals for his supper-meals as long as they’re somewhat palatable) and i have a cold (rendering me without a sense of smell.  can’t decide if that’s a blessing or not.  my food today all had pleasant texture, but i can’t really speak to how it tasted) so we’ll see how many weeks i last.  if anyone wants to join me, i’m happy to send links to my menu plans.  today was a bit haphazard as i had to work and wasn’t particularly prepared yet, but i ate mostly clean (except for 2 bananas, pork casings on my chicken sausages (really?  why would they do that?!), potato starch in some rice crackers i pounded before my supper smoothie because i was that hungry, and one piece of milk chocolate covered macadamia nuts that a co-worker brought from her trip to hawaii (mostly because i wished i had gone to hawaii.  eating the chocolate was decidedly not a good substitute).  i don’t know that i’ll post daily updates on my food (unless some dear reader really wants to see more photos of smoothies!), but if i discover any new fantastic favorite recipes, i’ll share them with you.  my current new favorite thing to add to smoothies is fresh nutmeg.  mmm…..

i have a few more new year’s treats planned for you.  let’s see if i can be organized enough to post them before february, m’kay?

found this cozy swing jacket in a wichita thrift store.  actually, i saw it in the store, tried it on, liked it but couldn’t quite justify it for some reason.  then, i couldn’t stop thinking about it, so when we ended up on that side of town again later that week, i asked if i could go back.  there it was!  still cute.  still comfy.  now, it’s mine.
