lazy sunday mornings

mmm…. pancakes and coffee.

not done with breakfast until 11:00.

in pajama-like clothing most of the day when it’s all cold and rainy outside.

have i mentioned how much i enjoy multiple toppings for my pancakes? mr. happy stuff (true to his nature) tops his pancakes with only butter and maple syrup. i prefer a buffet of toppings choices. this morning, one of my pancakes had peanut butter, sliced bananas and maple syrup, another one had plain yogurt and rhubarb “compote” (oh man is that stuff good. i bought it in paris last year and we finally opened it a few weeks ago. it’s basically only rhubarb chopped and stewed with sugar, but it makes the best ice cream topping and other similar uses–i may have to learn how to make it from scratch since it tastes so good and rhubarb as a flavor doesn’t seem to have really caught on here in the states.) and the last pancake had … pretty much all of those things together. i also am a big fan of nutella on pancakes (we’re out of it right now) and many flavors of jam. mr. happy stuff always rolls his eyes at the fortress of toppings surrounding my plate, but what can i say? i like all of the flavors, and have so much trouble choosing… why not have a little of everything? what’s your favorite way to top a pancake?
