{"id":829,"date":"2008-11-22T08:49:59","date_gmt":"2008-11-22T13:49:59","guid":{"rendered":"http:\/\/www.jayandcarissa.com\/carissa\/blog\/?p=829"},"modified":"2008-11-22T08:49:59","modified_gmt":"2008-11-22T13:49:59","slug":"kale-conquered","status":"publish","type":"post","link":"http:\/\/www.thisishappystuff.com\/?p=829","title":{"rendered":"kale, conquered"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"kale and egg\" src=\"http:\/\/lh3.ggpht.com\/_ETB_wSU3fUw\/SSgKnCC6XRI\/AAAAAAAAJjE\/Bh7Bz1pz4LY\/s720\/IMGP5693.JPG\" alt=\"\" width=\"495\" height=\"329\" \/><\/p>\n<p>the other night, we finally decided to cook up the bunch of kale i&#8217;d picked up at the farmer&#8217;s market a week or so ago.\u00c2\u00a0 we have <a href=\"http:\/\/www.marthastewart.com\/recipe\/whole-wheat-pasta-with-kale-and-fontina\">this one kale recipe<\/a> that we&#8217;ve tried and liked from martha stewart&#8217;s everyday food magazine.\u00c2\u00a0 it involves whole wheat spaghetti, bacon and fontina cheese in addition to the kale.\u00c2\u00a0 the first time i made it, i thought, &#8216;hmmmm&#8230;.. this is good, but it feels somehow not quite like a main dish.\u00c2\u00a0 needs a little something extra.&#8217;\u00c2\u00a0 so we tried chicken.\u00c2\u00a0 chicken was okay, but didn&#8217;t really add anything to the flavor of the dish and maybe actually blah-ed it up a little.\u00c2\u00a0 so the other night when i was cooking it up, i just couldn&#8217;t bring myself to add the plain shredded chicken we keep in the freezer to add to dishes.\u00c2\u00a0 i had pretty much resigned myself to eating the dish as-was, and then i remembered <a href=\"http:\/\/orangette.blogspot.com\/2008\/10\/pleasantly-sogged.html\">this recent blog post from orangette<\/a>. a fried egg?\u00c2\u00a0 perfect!\u00c2\u00a0 i combined the two recipes into my dinner and ended up with something like spaghetti carbonara with kale.\u00c2\u00a0 and fontina cheese.\u00c2\u00a0 and garlic.\u00c2\u00a0 i have to say that i will probably not eat this dish without an egg ever again.\u00c2\u00a0 the yolk smooths out the bitterness of the kale and binds the whole dish together in the most delicious sort of way.\u00c2\u00a0 i&#8217;m actually looking forward to the leftovers.<\/p>\n<p>for convenience sake, and because i did some tweaking, here&#8217;s the new recipe:<\/p>\n<p><strong>kale carbonara <\/strong>serves 4<\/p>\n<p>4 slices of bacon<\/p>\n<p>3 cloves garlic, chopped<\/p>\n<p>1 lb. kale, stemmed and chopped<\/p>\n<p>1-2 cups chicken broth<\/p>\n<p>1 lb. whole wheat spaghetti or angel hair pasta<\/p>\n<p>1 c. fontina cheese, finely shredded (could substitute another cheese if preferred.\u00c2\u00a0 fontina is a bit like parmesan, maybe slightly less sharp?)<\/p>\n<p>4 eggs<\/p>\n<p>1.\u00c2\u00a0 fry bacon and crumble into a small bowl.\u00c2\u00a0 pour out at least half the bacon fat into a small bowl.<\/p>\n<p>2.\u00c2\u00a0 saute chopped garlic in remaining bacon fat until golden.\u00c2\u00a0 add chopped kale (in two batches if necessary) and saute until wilted.\u00c2\u00a0 season with salt and pepper.\u00c2\u00a0 add enough chicken broth that the kale won&#8217;t burn and cook until soft (about 10 minutes), stirring occasionally.<\/p>\n<p>3.\u00c2\u00a0 meanwhile, cook and drain pasta.\u00c2\u00a0 toss with kale mixture to combine and add about half of the cheese.\u00c2\u00a0 portion into 4 shallow bowls or plates and top with more shredded cheese and crumbled bacon.<\/p>\n<p>4.\u00c2\u00a0 fry an egg for each bowl and place it on top of the pasta to serve.<\/p>\n<p><em>extra delicious served with a thick slice of toast and a glass of apple cider.<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>the other night, we finally decided to cook up the bunch of kale i&#8217;d picked up at the farmer&#8217;s market a week or so ago.\u00c2\u00a0 we have this one kale recipe that we&#8217;ve tried and liked from martha stewart&#8217;s everyday &hellip;
